Creating a restaurant and bar concept presents its own set of unique challenges. Usually, they tend to be a smaller footprint and, since airports seem to be lawless areas where time means nothing, restaurants are also faced with the challenge of how they define themselves as a concept overall. Cockpit, located in Lisbon’s main airport, leans into the aviation theme in name and style, while it’s offering covers all the bases that an airport-based restaurant should; food, drinks, and coffee. The physical footprint solves this problem beautifully with one side of the concept dedicated to quick grab-n-go breakfast and coffee, while the other side features a tall bar and open seating for those looking to bide their time with a cocktail and a tapa.
